Recipe du Jour: Avocado Sandwich

This is the simplest, most delicious healthy lunch (or snack) you can make: an easy avocado sandwich.

First, let me break down for you exactly why avocados are the best things ever, and why you should eat one every day. Avocados are a great source of healthy (monounsaturated) fat, which means they’re easy for your body to convert into energy. Eating avocados regularly will improve the health of your hair and skin, as well as reduce your overall cholesterol levels.

Not convinced yet? The avocado is also a wonderful source of (vegan) protein, because it contains all 18 essential amino acids necessary for the body to form a complete protein. This kind of protein is actually way easier and more effective for your body to use than the protein found in (for example) steak, because avocados also contain fiber, so the protein is more readily absorbed into the body. Avocados can also help prevent arthritis and heart disease.

Not to mention, they’re ridiculously yummy.

So, back to the recipe. For avocado open-faced sandwiches, you’ll need:

  • organic sprouted whole grain & seed bread, toasted (I use the Genesis 1:29 variety – 1 slice for a snack, 2 for lunch)
  • organic avocado (1/2 avocado per slice of bread)
  • lime juice
  • sea salt
  • black pepper

Once the bread is toasted, slice up the avocado and lay it on top. Squeeze the lime juice over the avocado, sprinkle a pinch of sea salt, and add some freshly ground black pepper. Snap a photo for instagram (duh) and dig in, face first.
