Recipe du Jour: Berry Parfait
This was today’s breakfast, and it was so sinfully delicious (and simple!) I knew I had to share. It’s barely a recipe – just three ingredients thrown together, but here you go.
- 0% organic plain Greek yogurt
- organic strawberries
- organic blueberries
You can make this with whatever fruit you enjoy, but I love starting my day with berries. I put it in a wine glass because I was feeling quite fancy, but obviously that’s not a requirement. It’ll taste the same!
Wash and slice up your fruit of choice and place a layer of it at the bottom of your glass. Take a dollop of the Greek yogurt, and layer it on top. Shake the glass a bit to settle the yogurt more evenly (Greek yogurt tends to be quite stiff). Keep layering the berries and yogurt until you get to the top! Enjoy it face-first or with a spoon.
Optional: you can add in some layers of granola, if you so desire – it’ll make this breakfast (or snack) even more filling, and add a crunchy texture to the mix. You can also drizzle a bit of honey for additional sweetness, or sprinkle some crushed walnuts, almonds, or chia seeds for a protein and nutrient boost.
